Ipomoea batata(sweet potato)


Common Name: Sweetpotato, Camote
Plant name: Ipomoea batata
Chemical constituents: sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient),Starch, vitamin C, and vitamin B6. Pink and yellow varieties are high in carotene, the precursor of vitamin A.
Uses:
Tuber, used as vegetable, eaten boiled, baked fried.
They  dried and ground into flour to make biscuits, bread, and other pastries.
 Tubers also dehydrated in chips, canned, cooked and frozen, creamed and used as pie fillings.
Leafy tops eaten as vegetable and sold in markets in Malaysia.
